Frito Pie Mexican Style


Easy and low fat. I didn't actually add up the fat but everything I used was reduced fat or low fat. So I'm going to call this healthy. Of course you don't need to use the lowfat foods but I have used them for so long I don't notice a taste difference.

Living in Texas I have heard so much about Frito Pie. I'm sure the original version which is just chili and cheese over Frito's is fantastic but I love refried beans so I came up with this version. It took me less than a half hour to make from beginning until I could eat. It did make more than I wanted so next time I will cut the recipe in half. But this one will give me lunch tomorrow.

Ingredients:
2 cups Frito corn chips - Reduced salt if desired. I recommend this because it is pretty salty.
1 can refried beans - reduced fat
1/4 cup salsa
1/2 pound lean ground beef or turkey
1 tablespoon taco seasoning
1/4 cup water
1 1/2 cups light cheddar cheese
shredded lettuce
diced tomato
diced onion
jalapeno slices
Light sour cream
taco sauce
Preheat oven to 350F.

Place one cup of chips into casserole. You can crush them if desired. (I'm going to next time I make this.)


Mix salsa into refried beans. This will make the beans thin enough to spread.


Spread over the top of the chips.

Sprinkle some of the cheese over the beans.

Brown meat.

Add seasoning and water. Mix well. Simmer until water has evaporated. About 5 minutes.

Spoon meat evenly over beans.

Sprinkle more cheese over the meat mixture.

Layer another cup of chips on top of meat.

Sprinkle remaining cheese over chips.

Cover the dish and bake for 20 minutes.

Garnish with whatever toppings you desire.
